Rosti, also called roschti, is originally a Swiss breakfast dish made from mildly seasoned grated potatoes that are pan-fried as a large pancake. This flavoured version is inspired by the original but they’re made with sweet potatoes and seasoned with spices and original flavours.

Ingredients
  

  • 2 cups raw sweet potato grated
  • 1/2 cup onion finely chopped
  • 1/4 cup green bell peppers diced
  • 2 tablespoons sattu flour
  • 2 tablespoons raw banana flour
  • 1 teaspoon ginger grated
  • 1 teaspoon garlic minced
  • 3 curry leaves finely chopped
  • A handful of fresh coriander chopped
  • Salt to taste
  • 2 teaspoons cold pressed coconut oil to grease the pan

Instructions
 

  • Grate the raw sweet potato in a bowl.
  • Mix all the ingredients together in a bowl until combined.
  • Heat a pan over medium-low heat. Shape spoonfuls of the sweet potato batter into desired shaped patties.
  • Saute until golden brown on both sides, about 15 minutes total.
  • Serve hot with chutney of choice.

Notes

  • Sweet potatoes are a rich source of fiber as well as contain a good amount of vitamins and minerals including iron, calcium, selenium, and they also contain a good source of most of our B vitamins and vitamin C.
  • Sweet potatoes are known for their high fiber and starch, this has been shown to promote a healthy digestive system.
