Rosti - Enhanced with the goodness of antioxidants and fiber

Rosti, also called roschti, is originally a Swiss breakfast dish made from mildly seasoned grated potatoes that are pan-fried as a large pancake.
This flavoured version is inspired by the original but they’re made with sweet potatoes and seasoned with spices and original flavours.
Mix all the ingredients together in a bowl until combined.
Heat a pan over medium-low heat. Shape spoonfuls of the sweet potato batter into desired shaped patties.
Saute until golden brown on both sides, about 15 minutes total.
Serve hot with chutney of choice.
Notes
Sweet potatoes are a rich source of fiber as well as contain a good amount of vitamins and minerals including iron, calcium, selenium, and they also contain a good source of most of our B vitamins and vitamin C.
Sweet potatoes are known for their high fiber and starch, this has been shown to promote a healthy digestive system.
