  • Coat amla with jaggery, cumin powder, and rock salt.
  • Keep this mixture aside for 2 days.
  • You will notice that the amla lets out some water.
  • Sieve this water but don’t discard it. You can use it for other cooking preparations.
  • After removing the water, sundry the amla for 2 to 3 days.
  • Avoid drying it completely. Ensure there is a little leftover moisture.
  • Once done, just sprinkle jaggery and store them in airtight containers.

  • If the sour taste of amla is a dealbreaker for you, this candy version can be the perfect fix.

  • To experiment with a savory version, blend roasted cumin/jeera, bishop's weed/ ajwain, and pepper finely, and sprinkle this powder on your amla.
