- 4 cups water
- 1 garlic clove
- 1 tsp oregano
- 2 cups peas, fresh
- Salt
- Black pepper, freshly ground
- 1/2 cup coconut milk
- Fresh mint, finely chopped
Place the water in a pan. Add garlic, oregano, and peas.
Cook for 4 to 5 minutes until the peas get tender.
Once it is cold, transfer the ingredients to a blender.
Add salt and pepper to taste and purée in a blender.
Combine with coconut milk and blend again.
Serve well chilled with a generous sprinkling of chopped mint.
