Make a paste of dry roasted coconut, ginger, garlic and green chili using a blender.
Take 2 tsp of cold pressed coconut oil in a pan, add bay leaves, a cinnamon stick and cloves.
Add finely chopped onion and let it fry for some time.
Add the paste and let it cook well..
Add red kashmiri chilli powder and fry for 10 seconds.
Now add the remaining masala and cooked masoor dal.
Fry for 1 minute, add salt and water. You can adjust the consistency as per your preference.
Add jaggery and tamarind paste and let it simmer in a slow flame for 4 to 5 minutes.
Turn off the gas
Add fresh coriander as a garnish before serving.
Serve hot with rice, chapati or with jowar bhakri.

Masoor dal is a powerhouse of antioxidants which can effectively reduce cell damage. It is rich in protein and vitamin A, C and E.
One can use any lentil as per availability.
