  • Bring water, vinegar, salt, pepper, turmeric powder, and mustard seeds to a pan to boil.
  • Cook for 20 minutes until the seeds become tender.
  • Turn off the heat and allow them to cool at room temperature.
  • Add in the garlic cloves.
  • Transfer to a glass jar. Store in the refrigerator.
  • Stays fresh for 2 months.
  • Use it as a condiment or add it to salads or stir fry.

Variations

  • One can use caraway seeds, coriander seeds, or horseradish if mustard seeds are unavailable.

  • You can opt to add pure and unpasteurized honey once the gas is turned off for additional taste and flavor.

Raw Papaya Stir Fry

Turn the fruit of the angels - raw papaya into a sweet, sour, and spicy stir fry packed with the power of mustard seeds which are not only loaded with nutrition but tickle the taste buds too. Relish this with roti, rice, or even as a salad.

  • Peel the papaya and grate it.
  • Heat the oil in a pan and add the mustard seeds and curry leaves.
  • When the mustard seeds begin to splutter, add a pinch of asafoetida and red chili.
  • Stir in the grated papaya, and add the turmeric powder and salt.
  • Cover and cook for 5 minutes.
  • Once done, add the lemon juice and garnish with coriander and serve hot.

Variations

  • One can use carrots and beetroot too, as per the availability.

Notes

  • Raw papaya contains papain which is considered effective in treating skin infections and lesions and also helps prevent constipation.
  • Loaded with fiber, it aids digestion and boosts gut health too.
  • Mustard seeds contain glucosinolates which are further broken down into isothiocyanates. These are linked with reducing the spread by inhibiting the growth of cancer cells and inducing cell apoptosis (cell death).
