Chyawanprash to Candy – Discover the Magic of Amla
Amla Chyawanprash - For A Desi Immunity Punch
Ingredients
- 2-3 cups of amla or Indian gooseberry
- 1 cup organic jaggery
- 5 to 6 tbsp A2 ghee
- Ground spice mixture
- 6-8 green cardamom or elaichi
- 1 tbsp whole black pepper
- 1 tsp nutmeg
- 1 bay leaf
- 1- inch Sri Lankan rolled cinnamon stick
- 1-2 tbsp fennel seeds or saunf
- 1 tsp cloves
- 5-6 strands of saffron or kesar
- 2 tsp dry ginger powder
Instructions
- Wash amlas or Indian gooseberries and pat them dry.
- Pressure cook amla for 2 whistles.
- Once done, you will be able to easily remove the pits.
- Place the pulp in a blender and make a smooth purée. Add 1 tbsp of water to ease grinding.
- In a pan, add some ghee and the amla purée.
- Keep sautéing for 10 minutes until the ghee begins to separate.
- Add jaggery powder to the amla purée.
- Keep sautéing until you achieve a thick, sticky, and messy mass.
On the side:
- Take the ingredients of the spice mixture, and blend them finely.
- Add the ground spice mixture to the pan and mix well.
- Add the amla mixture ready as above now and let it cook for another 5 minutes till everything is well combined.
- Let it cool down, and transfer it to an airtight jar.
Recipe tips
- Eat a spoonful daily to build immunity and stay away from illness.
- Children can take it with 1 tbsp of milk too.
- The amla jaggery mixture can be used as a jam or spread on rotis or parathas.
- It can be stored for 4 months in airtight containers.
- Consume 1 to 2 tsp of Chyawanprash with warm water either in the morning on an empty stomach or 2 hours post meals.

Ingredients
- 250 gm of amla/Indian gooseberry remove the seeds by slightly soaking them in hot water and cutting them into slices
- 150 gm chemical-free jaggery powder
- 2 tsp rock salt
- 1 tsp jeera or cumin powder
Instructions
- Coat amla with jaggery, cumin powder, and rock salt.
- Keep this mixture aside for 2 days.
- You will notice that the amla lets out some water.
- Sieve this water but don’t discard it. You can use it for other cooking preparations.
- After removing the water, sundry the amla for 2 to 3 days.
- Avoid drying it completely. Ensure there is a little leftover moisture.
- Once done, just sprinkle jaggery and store them in airtight containers.

Variations
- To experiment with a savory version, blend roasted cumin/jeera, bishop's weed/ ajwain, and pepper finely, and sprinkle this powder on your amla.
