For the filling:

  • Dry roast the grated coconut for two minutes. Turn off the heat.
  • Add the semi-powdered melon seeds, pumpkin seeds, cardamom powder, and jaggery powder.
  • Mix well and set aside.

For the malpua:

  • Mix the flour, jaggery powder, and add a few drops of milk to form a runny paste.
  • Whisk again.
  • Now take a few drops of A2 ghee in a flat pan.
  • Take a ladleful of the malpua batter and pour it into the center. Let it brown, and wait until the edges turn golden.
  • Then flip it and brown the other side.
  • Take it off the pan before it gets too crisp, or it won't fold.
  • Fill in with coconut filling.
  • Serve hot.

Notes

  • You can alternatively use jowar flour/Amaranth flour/wheat flour as per the availability.
  • Ragi is rich in iron, fiber, and calcium.
  • Regular consumption of ragi is highly beneficial in dealing with conditions of anxiety, depression, and insomnia.
  • Antioxidants, mainly tryptophan and amino acids present in ragi, work as natural relaxants.
