Tricolor Kebabs: A Nutritional Delight, Bite by Bite!

Tricolor Kebabs are an easy-to-make, delightful, and nutritious vegetarian snack that celebrates the vibrant colors of the Indian flag. With layers of carrot, spinach, and paneer, these kebabs not only please the eyes but also offer a plethora of essential nutrients. Whether you add them to your meal or enjoy them as a stand-alone snack, Tricolor Kebabs will surely be a hit!

Ingredients
  

For the saffron layer (Carrot kebabs):

  • 250 g grated carrots
  • A medium-sized boiled and mashed sweet potato
  • 1 tsp ginger-garlic paste
  • 1/2 tsp You Balance spice blend
  • 1/2 tsp cumin powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 1 tbsp Sattu flour
  • Cold-pressed coconut oil for pan-frying

For the white layer (A2 paneer kebabs):

  • 200 g crumbled A2 paneer/Indian cottage cheese
  • 1 medium-sized boiled and mashed potato
  • 2 tbsp fresh cream made at home or A2 cream
  • 1 tsp ginger-garlic paste
  • 1/2 tsp garam masala
  • 1/2 tsp pepper powder
  • Salt to taste
  • 1 tbsp rice flour
  • Cold-pressed coconut oil for pan-frying

For the green layer (Spinach kebabs):

  • 200 g blanched spinach leaves, finely chopped
  • 1 cup boiled and mashed green peas
  • 1-2 green chilies, finely chopped
  • 1 tsp chaat masala
  • 1/2 tsp cumin powder
  • Salt to taste
  • 1 tbsp oats flour
  • Cold-pressed coconut oil for pan-frying

Instructions
 

Prepare the saffron layer (Carrot kebabs):

  • Combine grated carrots, mashed sweet potato, ginger-garlic paste, You Balance spice blend, cumin powder, red chili powder, salt, and sattu flour in a mixing bowl. Mix everything well until it forms a smooth mixture. Shape a small portion of the mixture into small roundels or oval kebabs. Repeat this process for the rest of the mixture. Set aside.

Prepare the white layer (A2 paneer kebabs):

  • In a mixing bowl, combine crumbled A2 paneer, mashed potato, fresh cream homemade or A2 cream, ginger-garlic paste, garam masala, white pepper powder, salt, and rice flour. Mix well until it forms a smooth mixture. Shape a small portion of the mixture into small roundels or oval kebabs. Repeat for the rest of the mixture. Set aside.

Prepare the green layer (Spinach kebabs):

  • In a mixing bowl, combine chopped spinach leaves, mashed green peas, green chilies, chaat masala, cumin powder, salt, and oats flour. Mix well until it forms a smooth mixture. Shape a small portion of the mixture into small roundels or oval kebabs. Repeat for the rest of the mixture. Set aside.
  • Pan-fry the kebabs.
  • Heat a few drops of cold-pressed coconut oil in a pan over medium heat. Once the oil is hot, add the prepared kebabs in batches and pan-fry them until they turn golden brown and crispy on both sides. Be gentle while flipping the kebabs to avoid breaking them.

Assemble the Tricolor Kebabs:

  • Arrange the kebabs on a serving platter in three separate sections, representing the colors of the Indian flag Orange(Saffron Layer), white (White Layer), and green (Green Layer).

Serve:

  • Serve the Tricolor Kebabs hot with green or tamarind chutney, as per your choice.

Power Tips and Variations:

  • Carrot Substitution: If carrots are unavailable, you can easily substitute them with squash.
  • Mint Twist: For a refreshing twist, you can use mint instead of spinach to create the green layer of the kebabs.
  • Non-Vegetarian Option: You can replace the white layer (paneer) with minced chicken. Mix the minced chicken with homemade fresh cream for a creamy and juicy texture for the kebabs.
