DIY Gujiya to Gulal – Happy Holi

 

Gujiya – Bake Your Sweet Dumplings

Celebrate and enjoy the festival of colors by preparing the star sweet of Holi. Native to Rajasthan, gujiyas are sweet dumplings made of flour and filled with a dry fruit mixture. Enjoy a healthy baked version of this scrumptious delight with your family.

Ingredients
  

For the cover

  • 1 cup mix of rice and raw banana flour
  • 1/2 cup sattu
  • 2 tbsp A2 Ghee

For the filling

  • 50 g steel-cut oats powder
  • 2 tbsp almonds chopped
  • 2 tbsp pistachios chopped
  • 2 tbsp cashew nuts chopped
  • 4 tbsp dates chopped
  • 2 tbsp raisins chopped
  • 1/2 tsp cardamom powder

Instructions
 

  • Mix the flour in a bowl with A2 ghee. Add water and make a soft and smooth dough.
  • Cover the dough, and let it rest for 15 minutes.
  • Mix all the ingredients for the filling in a bowl.
  • Divide the dough into 15 small balls.
  • Dust and roll the ball into a 5-inch circle.
  • Keep a small amount of filling in the center of the circle, and fold to make a semicircle.
  • Press and seal the ends nicely. Make all the gujiyas in the same manner.
  • Preheat the oven to 180°C.
  • Line the gujiyas on a baking tray.
  • Bake for 15-20 minutes until nicely browned.

Power tips and variations

  • You can opt to use whole wheat flour too and add coconut filling along with the nuts for a different flavor and taste.
  • You can also add cacao nibs for a different variation.
  • Dates give the needed sweetness but you can opt to add organic jaggery powder too.

Notes

  • Baked gujiyas are loaded with fiber, antioxidants, protein, and the goodness of nuts which contain B vitamins, Vitamin K, magnesium, calcium, iron, and potassium.
  • Rich in fiber, sattu is excellent for your gut microbiome. It can ease constipation and help with smooth bowel movements. It can help fight acidity, flatulence, inflammation, and indigestion, too.
  • Raw banana flour is low in sugar and contains highly resistant starch, which makes it ideal for diabetics when consumed in moderation. Resistant starch helps improve insulin sensitivity.

Ingredients
  

  • 2 cups beetroot grated
  • 3 cups rice flour
  • 1 cup water
  • 2 tbsp rose water

Instructions
 

  • Place the freshly grated beetroot in a handkerchief and squeeze out the juice.
  • Mix beet juice with rice flour and rose water. Do this well.
  • Now spread it on a plate and let it dry well in a well-ventilated place.
  • Sieve through a fine strainer and use it.

Green (Hara) Gulal

Ingredients
  

  • 1 large bunch of coriander, fresh
  • 1 large bunch of spinach leaves
  • 1 1/2 cups of water
  • 2 cups of rice flour or gram flour, besan

Instructions
 

  • Grind the greens with water and strain them. In the juice add Rice flour.
  • Mix it well.
  • Now spread it on a tray and let it dry completely in a well-ventilated room.
  • Sieve through a fine strainer and use it.

Power tips and variations

  • Adding a few drops of lemon juice to turmeric powder will give it a bright red color.
  • You can alternatively use hibiscus flowers or marigold flowers. Grind them in a mixer and add rice flour to get different homemade colors.

  • Besan is a natural cleanser with alkalizing properties that helps maintain your skin’s pH.
  • It gets rid of dirt and excess oil without letting your skin dry out.
  • Turmeric is highly anti-inflammatory and loaded with antioxidants. It helps you attain a natural glow, promotes wound healing, reduces acne scarring, and effectively works for various skin conditions and flare-ups.
  • Rice flour is rich in antioxidants and contains para-aminobenzoic acid which helps maintain the smoothness and elasticity of the skin.
