Ragi Malpua: Homemade and Guilt-Free
Ingredients
For the malpua:
- 4 tbsp ragi flour
- 2 tbsp whole wheat khapli flour
- 1 tbsp steel cut oats ground to taste
- 2 tsp organic jaggery powder
- A few tablespoons of coconut milk as per the consistency needed
- A few drops of A2 ghee
For the filling:
- 2 tbsp coconut grated
- 2 tsp melon seeds semi-powdered
- 2 tsp pumpkin seeds semi-powdered
- 2 tsp green cardamom powder
- 2 tsp organic jaggery powder
Instructions
For the filling:
- Dry roast the grated coconut for two minutes. Turn off the heat.
- Add the semi-powdered melon seeds, pumpkin seeds, cardamom powder, and jaggery powder.
- Mix well and set aside.
For the malpua:
- Mix the flour, jaggery powder, and add a few drops of milk to form a runny paste.
- Whisk again.
- Now take a few drops of A2 ghee in a flat pan.
- Take a ladleful of the malpua batter and pour it into the center. Let it brown, and wait until the edges turn golden.
- Then flip it and brown the other side.
- Take it off the pan before it gets too crisp, or it won't fold.
- Fill in with coconut filling.
- Serve hot.
Notes
- You can alternatively use jowar flour/Amaranth flour/wheat flour as per the availability.
- Ragi is rich in iron, fiber, and calcium.
- Regular consumption of ragi is highly beneficial in dealing with conditions of anxiety, depression, and insomnia.
- Antioxidants, mainly tryptophan and amino acids present in ragi, work as natural relaxants.
